Title: Down East Cracker Pie

Yield: 2 Pies

3/4cFine cracker crumbs
1cMaple syrup
1cWater
1/2cButter
1/2cVinegar
1/2cWhite sugar
1/2cRaisins
  Spices to taste; see note

Roll out crackers to give 3/4 cup fine crumbs. You may use Ritz, saltines, or "milk crackers," but the traditional cracker to use would be Common Crackers (now available from the Vermont Country Store in Weston, VT.)

Combine all ingredients in a saucepan and cook a few minutes. Spices you might use could include cloves, nutmeg, cinnamon, allspice, and/or mace. Or you may use a commercial blend, like pumpkin pie spice or apple pie spice.

Divide cooked mixture in two; use each part to fill a 2-crust pie. Bake at 400 F for 10 minutes, then lower the temperature to 350 F for 20 to 30 minutes.
